She graduated from Scappoose High School in Scappoose, Oregon, in 2002. Her first job was assisting in the sales of heavy construction equipment. Underwood worked as a waitress at Hooters in Beaverton, Oregon. She attended Oregon State University as a major in Business Marketing.

She first appeared in "Playboy" in the pictorial "The Girls of the Pac 10" in the October 2005 issue (she also graced the cover).
